Rio Olympic Spread: Anything from Halal to Kosher to Kimchi

Rio De Janeiro, May 10: The dining room for the athletes village at the Rio de Janeiro Olympics will be bigger than two football fields, and the kitchen being built in the same massive tent will be as large as one.

The setting hints at quite a spread when the games open in just under three months.

"We want to make sure when there is a medal or a record, part of that record also goes to our food team," said Marcello Cordeiro, Rio's director of food and beverages, in an interview with The Associated Press.

At its peak, the athletes village kitchen will prepare 60,000 meals daily, produced from daily shipments of 210,000 kilograms (460,000 pounds) of raw ingredients — all served up on 4 million biodegradable plates for 18,000 athletes, coaches and staff.

Diners will choose from five different buffets — Brazilian, Asian, International, Pasta and Pizza, Halal and Kosher.

Food for Muslim and Jewish athletes will adhere to their specific religious dietary laws. Koreans will even get spicy kimchee — the nation's famous fermented cabbage, scallions and assorted vegetables — shipped directly from home.

And everyone can try 40 varieties of Brazil's exotic fruits like caju, acai, carambola, caqui, goiaba and maracuja, often squeezed into Brazil's famously delicious juices (sucos in Portuguese).

The subsequent Paralympics will offer the same variety, though the numbers will be smaller.

"We are confident our Brazilian food is going to be a success, we'll make a bit more to be safe," Cordeiro said. "We are doing our best to bring the world to Brazil."

He listed key ingredients of the basic Brazilian diet: rice, black beans, farofa (flour from toasted cassava often sprinkled on top of food) and meat. But the regional specialties are as large as the continent-size country itself.

Buffet-style eateries are popular in Brazil, where they charge by the weight — so-called "Kilo Restaurants." There will be no charge for the athletes.

"They can eat all they want,' Cordeiro said. "No scales. We know athletes know exactly what they need to eat."

To prepare the final menus, Cordeiro and colleagues are holding about 20 food testings before the Olympics open Aug. 5. They've been through seven or eight already, including one a few days ago.

"Imagine you start eating at 10 a.m. and you finish 8 p.m.," Cordeiro said. "Everyone thinks that food-tasting is super-duper, but this is how you eat."

He demonstrated, lifting a tiny sandwich slice up to his nose, one made of ham, mozzarella, cream cheese and lettuce. He checked for texture and presentation, and finally took a small bite. Next he graded the offering on a checklist.

"I'll tell you the truth, I can't stand the testing," he said. "This means eating the whole day. Actually, not eating. Tasting. You bite and you leave it."

Rio will also offer different breakfast styles. For the Japanese palette there might be rice and miso soup, or fish and natto, the gooey, pungent paste made from fermented soybeans.

"We're also very careful with the spice," Cordeiro said.

The athletes village consists of 31 apartment towers containing 10,160 bedrooms. It is just one part of the Olympic food operation. Deborah Cordiner is handling most of the rest, including athletes' food at venues, and support centers for volunteers and accredited guests.

"We always face the same challenges, the transport, the volume of food," said Cordiner, a Scot who has worked at all but two Olympics — Salt Lake City and Sochi — since the 2000 games in Sydney.

She said athletes at venues will munch on "tens of thousands" of sandwiches.

A spokesman for the organizing committee declined to give the names of catering companies under contract, saying they "are not sponsors, so they don't have a right to be associated with the games."

The International Olympic Committee and organizers receive billions from sponsors like McDonald's.

Cordeiro said he is worried less about the menu — he has about 20 chefs, several from outside Brazil — than he is about food safety. He must guarantee the food is free from steroids or other ingredients that might cause an athlete to test positive on a doping test.

A major offender is the steroid Clenbuterol, which is fed to livestock in some countries to produce leaner meat.

"To assure that our ingredients are free of steroids and other kinds of chemicals, we are making sure our suppliers have all the certificates that are demanded by our national food and drug agency," Cordeiro said. "People don't know how complex it is to put out safe food. We know that this is a very sensitive subject that could influence a result or an athlete's medal."

He said almost all the food was coming from Brazil, save for items like kimchee and some spices.

Athletes will be forbidden from taking their own food into the dining area, though many will eat away from the village — often in training areas set up by their national teams.

"If an athlete brings something in from outside and eats it the dining hall and gets sick, then it can be blamed on the village food," he said. "But in the end we know that athletes can go anywhere and buy a hot dog and possibly get it inside."

Mount Maunganui, Feb 2: India registered a rare 5-0 whitewash against New Zealand after notching up a seven-run win in the fifth and final T20 International at Bay Oval here on Sunday.

Electing to bat, India posted 163 for three, riding on Rohit Sharma's 60 off 41 balls and a 33-ball 45 from K L Rahul.

The visitors then restricted the hosts to 156 for nine with Jasprit Bumrah claiming three wickets for 12 runs.

Chasing the target, the Black Caps were tottering at 17 for three in 3.2 overs.

Tim Seifert (50) and Ross Taylor (53) then added 99 runs for the fourth wicket as New Zealand recovered to 116.

Seifert clobbered a 30-ball 50 studded with five fours and three sixes, while Ross Taylor hit two sixes and five fours in his 47-ball 53-run innings.

However, once Seifert was dismissed in the 13th over, the hosts suffered a collapse, losing five wickets, including Taylor, for 25 runs to loss the plot in the end.

New Delhi, Mar 10: Six-time world champion M C Mary Kom (51kg) and world number one Amit Panghal (52kg) were among three Indian boxers who secured Olympic berths by advancing to semifinals of the Asian Qualifiers here on Monday, taking the total number of the country's Tokyo-bound pugilists to eight.

Second-seeded Mary Kom notched up a comfortable 5-0 win over Philippines' Irish Magno in her quarterfinal bout for a ticket to her second Olympic Games. She won a bronze in the 2012 London Olympics when women's boxing was first introduced at the showpiece.

The 37-year-old will square off against China's Yuan Chang in the semifinals. Chang is a former Youth Olympics champion.

Earlier, world silver-medallist and top seed Panghal edged out familiar foe Carlo Paalam of Philippines in a 4-1 split verdict to be assured of his maiden Olympic appearance and a medal at the qualifiers.

In the last Indian bout of the day, world bronze-medallist Simranjit Kaur (60kg) upstaged second seed Namuun Monkhor of Mongolia 5-0 to secure her first Olympic place.

With this, the number of Indian boxers securing Olympic berths went up to eight after Satish Kumar (+91kg), Pooja Rani (75kg), Vikas Krishan (69kg), Lovlina Borgohain (69kg) and Ashish Kumar (75kg) advanced to the semifinals on Sunday.

"I dedicate my Olympic quota to my uncle Raj Narayan, it's his birthday and he is someone who gives me a lot of courage," said Panghal after his bout.

World bronze-winner and Commonwealth Games silver-medallist Manish Kaushik, however, lost 2-3 to third seed Chinzorig Baatarsukh of Mongolia after an intense battle but is not out of contention for an Olympic berth just yet.

Kaushik has to win the box-off between losing quarterfinalists as the top six boxers will claim Tokyo tickets in the 63kg category. He will face Australia's Commonwealth Games champion Harrison Garside in the box-off. The two clashed in the CWG final in 2018 with Garside ending up on the winning side.

Panghal started India's winning run on Monday by managing to pull off a close win.

The 23-year-old, who is the reigning Asian Games and Asian Championships gold-medallist, had earlier beaten Paalam in the semifinals of the 2018 Asian Games and the quarterfinals of 2019 world championships, which were also split decisions.

"I followed the instructions given by my coaches. I ensured that he didn't get on top of me. I think I was pretty consistent in all three rounds," Panghal said.

Next up for Panghal is China's Jianguan Hu, who stunned world bronze-medallist and fourth seed Kazakh Saken Bibossinov 5-0.

"I have beaten him in the Asian Championships and I know how to get the better of him," Panghal said of his next opponent.

The Haryana lad didn't exactly look at his best during the bout but his trademark counter-attacking game fetched him the desired result against a rival, who is challenging him more with every fresh encounter.

Mary Kom, on the other hand, put out a near-perfect performance against the very spirited Magno. The Manipuri dictated the pace of the bout, drawing from her huge reservoir of experience to put Magno on the backfoot with a very effective counter-attacking strategy.

Simranjjit, also an Asian silver-medallist, will face third seed Shih-Yi Wu of Taiwan in the semifinals after a fine performance against Monkhor. Simranjit's right hand connected accurately all through.

Kaushik, who was up against an Asian Games silver-medallist, started well but lost steam in the face of relentless body shots by Baatarsukh, a two-time podium finisher at the Asian Championships.

Baatarsukh had lost to Kaushik in the second round of the world championships last year and he exacted revenge with an aggressive takedown of the Indian, especially in the final three minutes.

However, former junior world champion Sakshi Chaudhary (57kg) failed to secure an Olympic berth after going down to Korea's Im Aeji in the quarterfinals.

The 19-year-old Chaudhary lost 0-5 to Im, who is also a former world youth champion. Only the semifinalists are entitled to an Olympic berth in the women's 57kg category of the ongoing event.

Her next shot at Tokyo qualification would be the world qualifiers in May, provided she is selected for it.

New Delhi, Jan 16: Veteran cricketer Mithali Raj was on Thursday demoted to Grade B from A in the BCCI central contracts while Radha Yadav and Taniya Bhatia were elevated to the middle bracket.

Mithali not being kept in the Rs 50 lakh category was expected as the 37-year-old retired from T20s in September last year. However, she remains the ODI captain and plans to carry on till the 2021 World Cup.

T20 skipper Harmanpreet Kaur retained his A category contract alongside Smriti Mandhana and Poonam Yadav.

Radha and Taniya, who both had a Grade C contract worth Rs 10 lakh last year, have now entered Grade B (Rs 30 lakh).

Players getting a central contract for the first time are 15-year-old opener Shafali Verma and Harleen Deol, who like the teenager is an attacking batter.

Shafali has attracted a lot of attention ever since making her India debut last year. She recently made 124 against Australia A in Brisbane. The opener will be expected to deliver in the upcoming T20 World Cup Down Under.

Dropped from the list is Mona Meshram, who was in Grade C last year and hasn't played a single game in recent times.

The latest contracts run from October 2019 to September 2020.

Grade A (Rs 50 lakh): Harmanpreet Kaur, Smriti Mandhana, Poonam Yadav.

Grade B (Rs 30 lakh): Mithali Raj, Jhulan Goswami, Ekta Bisht, Radha Yadav, Taniya Bhatia, Shikha Pandey, Jemimah Rodrigues, Deepti Sharma.

Grade C (Rs 10 lakh): Veda Krishnamurthy, Punam Raut, Anuja Patil, Mansi Joshi, D Hemlatha, Arundhati Reddy, Rajeshwari Gayakwad, Pooja Vastrakar, Harleen Deol, Priya Punia, Shafali Verma.
